I recommend that you update the macOS to Big Sur 11.3 and see if the issue (s) persist. Apparently the bluetooth antennas are in the rear I/O shield, check out this M2 Mini teardown here. At 5:13 he is unhooking the bluetooth antenna cables from the logic board. At 6:48 he removes the rear I/O shield, you can see the bluetooth antenna cables attached to it.
Solved my M1 Mac Bluetooth issues by plugging in my keyboard and buying a Logitech mouse with its own Bluetooth dongle. (Apple tells me a MacOS fix is in progress and forthcoming just about The M1 Bluetooth may be more aggressive about polling the connection between the older mouse and keyboard versus the newer one, possibly causing the mouse and keyboard to constantly signal the Mac of its connection, thus draining the batteries. Really wanted to have an excuse to buy a new mouse but 🤷🏻‍♀️. logitech m350 works well for me, inexpensive, can use both bluetooth and wireless connection. I prefer to use bluetooth if possible, it frees up usb-c ports and probably use less power than an adapter/hub.
